  • 2 cups cooked chicken, shredded

  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt (for biscuits)
  • 1/2 cup unsalted butter, cold
  • 3/4 cup buttermilk
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons unsalted butter, melted (for brushing)
  • 1 teaspoon Old Bay seasoning

Instructions

  1. Heat olive oil in a skillet. Sauté diced yellow onion until translucent. Add minced garlic and cook until fragrant. Stir in dried thyme and unsalted butter until melted. Sprinkle all-purpose flour over the mixture and cook briefly to form a roux. Gradually whisk in chicken broth and heavy cream until smooth and thickened. Season with kosher salt and black pepper to taste. Stir in frozen mixed vegetables and cooked chicken. Simmer until vegetables are heated through.
  2. In a bowl, combine all-purpose flour, baking powder, granulated sugar, garlic powder, baking soda, and kosher salt. Cut in cold unsalted butter until the mixture resembles coarse crumbs. Stir in grated sharp cheddar cheese. Gradually add buttermilk, stirring until a soft dough forms.
  3. Preheat oven to 375°F (190°C). Transfer the chicken filling into a baking dish. Drop spoonfuls of the biscuit dough over the filling, covering it evenly. Melt unsalted butter and mix with Old Bay seasoning and garlic powder. Brush over the biscuit topping. Bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.
