200g egg noodles
1 tbsp vegetable oil
2 chicken breasts, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 onion, thinly sliced
2 garlic cloves, minced
1 tbsp fresh ginger, grated
100g unsalted cashew nuts
4 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice vinegar
1 tsp sesame oil
Freshly ground black pepper
Fresh cilantro, chopped, for garnish
Lime wedges, for serving
Instructions
Cook the egg noodles according to package instructions until al dente. Drain and set aside.
Heat vegetable oil in a large pan or wok over medium-high heat. Add sliced chicken breasts and stir-fry until cooked through and browned. Remove chicken from pan and set aside.
In the same pan, add sliced bell peppers and onion. Stir-fry for 3-4 minutes until slightly softened.
Add minced garlic and grated ginger to the pan. Cook for another minute until fragrant.
Return the cooked chicken to the pan. Add cashew nuts, soy sauce, oyster sauce, rice vinegar, and sesame oil. Stir everything together until well combined and heated through.
Add the cooked egg noodles to the pan. Toss everything together until the noodles are well coated with the sauce and heated through.
Season with freshly ground black pepper to taste. Serve the chicken cashew noodles in bowls, garnished with chopped cilantro and lime wedges on the side.
