  • 2 cups cooked, shredded chicken
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese, divided
  • 2 cups shredded mozzarella cheese, divided
  • 24 jumbo pasta shells
  • 2 cups Alfredo sauce
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package directions until al dente. Drain and set aside.
  3. In a large bowl, mix together the shredded chicken, ricotta cheese, ½ cup Parmesan cheese, 1 cup mozzarella cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread 1 cup of Alfredo sauce evenly on the bottom of a greased 9×13 inch baking dish.
  5. Carefully stuff each cooked shell with the chicken and cheese mixture and place them in the baking dish.
  6. Pour the remaining Alfredo sauce over the stuffed shells.
  7. Sprinkle the remaining ½ cup Parmesan cheese and 1 cup mozzarella cheese on top.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Garnish with chopped parsley before serving.
