A creamy and cheesy seafood bake featuring a delightful mix of shrimp, scallops, and squid, combined with tender baby potatoes and fresh cherry tomatoes. This dish is topped with a golden layer of melted cheddar and Parmesan cheese, making it a perfect comfort food for seafood lovers.

Ingredients

  • 200g cherry tomatoes, halved
  • 200ml double cream
  • 300g mixed seafood (such as shrimp, scallops, and squid), thawed if frozen
  • 50g grated Parmesan cheese
  • 100g grated cheddar cheese
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 200g baby potatoes, halved
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200°C (180°C fan). Lightly grease a baking dish with olive oil.
  2. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add 1 finely chopped onion and 2 minced garlic cloves. Sauté until softened and fragrant.
  3. Add 200g of halved baby potatoes to the pan. Cook for about 5 minutes, stirring occasionally.
  4. Stir in 300g of mixed seafood and 200g of halved cherry tomatoes. Cook for another 3-4 minutes until the seafood begins to turn opaque.
  5. Pour in 200ml of double cream and stir to combine. Season with salt and pepper to taste.
  6. Transfer the seafood mixture to the greased baking dish and spread it out evenly. Sprinkle 100g of grated cheddar cheese and 50g of grated Parmesan cheese over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
  8. Remove from the oven and let cool slightly before serving. Garnish with chopped fresh parsley.
