This Cheesy Ranch Ground Beef and Rice Casserole is a hearty and flavorful dish that combines crispy bacon, savory ground beef, and creamy cheddar soup with rice. Topped with a generous layer of melted Mexican cheese and fresh green onions, it’s perfect for family dinners or gatherings.

  • 8 slices bacon, chopped
  • 1 lb lean ground beef
  • 1 tablespoon minced garlic
  • 1 cup instant rice
  • 10.5 oz condensed cheddar soup
  • 1 1/4 cups milk
  • 1 oz ranch dressing mix
  • 3 cups shredded Mexican cheese blend
  • 1 1/4 cups chopped green onions

Instructions

  1. Preheat oven to 350°F and grease a 9 x 13-inch baking dish.
  2. In a large skillet over medium-high heat, cook chopped bacon until browned and crispy. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate.
  3. In the same skillet, cook ground beef until browned, breaking it into crumbles. Drain excess grease.
  4. Stir in minced garlic and cook for 2-3 minutes. Remove skillet from heat and add instant rice, stirring to combine.
  5. Add condensed cheddar soup, milk, and ranch dressing mix to the skillet, stirring well. Mix in 1 cup of shredded cheese, 1 cup of chopped green onions, and two-thirds of the cooked bacon.
  6. Transfer mixture to the prepared baking dish, spreading evenly. Cover with foil and bake for 40 minutes.
  7. Remove foil, sprinkle remaining 2 cups of cheese and cooked bacon on top. Return to the oven and bake uncovered until bubbly and cheese is melted, about 5-10 minutes.
  8. Let rest for a few minutes, then sprinkle with remaining green onions before serving.
