These Cheesy Potato Burritos are a delightful combination of crispy tater tots, seasoned ground beef, and melted cheeses, all wrapped in soft flour tortillas. Perfect for a quick and satisfying meal, they can be customized with your favorite toppings.

  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortilla wraps
  • 1/4 cup Taco Bell chipotle sauce
  • 1 pound ground beef
  • 1/2 cup sour cream
  • 2 cups frozen tater tots
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Optional toppings: diced tomatoes, chopped green onions, cilantro

Instructions

  1. Cook the tater tots according to package instructions until crispy. Slightly crush them and set aside.
  2. In a skillet over medium heat, brown the ground beef. Season with salt and pepper. Once cooked, drain excess grease.
  3. In a large bowl, combine cooked ground beef, crushed tater tots, shredded cheddar cheese, and shredded Monterey Jack cheese.
  4. Warm tortillas in a dry skillet or microwave for 10-15 seconds until pliable. Spoon the filling onto each tortilla. Drizzle with Taco Bell chipotle sauce and add a dollop of sour cream.
  5. Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito. Place burritos in a baking dish. Sprinkle with additional shredded cheese and bake until cheese is melted and bubbly.
  6. Remove from oven and garnish with diced tomatoes, chopped green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce on the side.
