This Cheesy Chicken Fajita Casserole is a delightful twist on a classic dish, combining tender chicken, creamy cheese, and vibrant vegetables. It’s perfect for any meal, whether served as a dip with tortilla chips or as a hearty entrée wrapped in tortillas.

  • 12 cups diced or shredded cooked chicken
  • 8 ounces cream cheese, cubed
  • 1 tablespoon olive oil
  • 1 ½ teaspoons fajita seasoning
  • ½ cup onion, diced
  • 1 cup bell peppers, diced
  • 8 ounces shredded colby jack cheese
  • ½ teaspoon salt

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the diced onions, bell peppers, and salt. Sauté for 4-5 minutes until softened.
  2. Lower the heat to medium and stir in the diced chicken, cubed cream cheese, fajita seasoning, and half of the shredded cheese. Stir continuously until everything is melted and well combined.
  3. Lightly spray an 8×8 casserole dish with non-stick spray. Pour the mixture into the dish and smooth it out. Sprinkle the remaining shredded cheese evenly on top.
  4. Preheat your oven to 350°F (175°C). Bake the casserole for 25-30 minutes until the cheese is melted and bubbly.
  5. Serve hot as a dip with tortilla chips and celery sticks, or as an entrée with rice or wrapped in tortillas.
