Ingredients
Scale
4 boneless skinless chicken breasts
2 cups chopped broccoli florets
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp onion powder
2 tsp Italian seasoning
1 garlic clove, minced
1 tbsp water
1/2 cup reduced-fat shredded cheddar cheese
1/4 cup low-fat cream cheese
1 tbsp Dijon mustard
Salt and pepper to taste
Instructions
In a microwave-safe bowl, combine chopped broccoli with 1 tbsp water. Cover with plastic wrap and microwave on high for 2-3 minutes, or until tender.
Use a sharp knife to slice each chicken breast horizontally, creating a pocket. Season the chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and pepper.
In a large bowl, mix the steamed broccoli, minced garlic, reduced-fat shredded cheddar cheese, low-fat cream cheese, and Dijon mustard. Season with salt and pepper to taste.
Spoon the broccoli and cheese mixture evenly into each chicken breast pocket. Secure the openings with toothpicks if needed.
Preheat the oven to 400°F (200°C). Heat 1 tbsp olive oil in a large, oven-safe pan over medium-high heat. Add the stuffed chicken breasts and cook for 2-3 minutes per side, or until golden brown.
Cover the pan with aluminum foil and transfer it to the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the toothpicks and let the chicken rest for a few minutes before serving.
