  • 45 thinly sliced chicken breasts (about 2lbs)
  • 8oz softened cream cheese
  • 1/3 cup salsa
  • 1/2 (1oz) packet of fajita seasoning
  • 2 large bell peppers (sliced)
  • 12 cups shredded cheese (Mexican blend or cheddar)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Place the thinly sliced chicken breasts evenly in the greased baking dish.
  3. In a medium bowl, combine softened cream cheese, salsa, and fajita seasoning until well mixed.
  4. Evenly spread the cream cheese mixture over the chicken breasts.
  5. Arrange sliced bell peppers on top of the cream cheese mixture. Sprinkle shredded cheese over the peppers.
  6. Bake uncovered on the center rack for 25-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
