  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1 cup chopped pickles
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • Olive oil (for cooking)
  • Fresh cilantro, chopped (for garnish)
  • Ketchup, mustard, and mayonnaise (for serving)

Instructions

  1. In a large skillet over medium heat, add a drizzle of olive oil. Cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet. Cook until softened.
  3. Stir in ground cumin, chili powder, salt, and pepper. Let the mixture simmer for a few minutes. Remove from heat and let it cool slightly.
  4. Lay out tortillas and spoon a portion of the beef mixture down the center of each. Top with shredded cheddar and Monterey Jack cheese, chopped pickles, diced tomatoes, and shredded lettuce.
  5. Fold in the sides of the tortilla and roll up tightly to enclose the filling.
  6. Heat a large skillet or griddle over medium heat. Place the burritos seam-side down in the skillet and cook until the tortillas are golden brown and crispy, about 2-3 minutes per side.
  7. Remove from heat, garnish with fresh cilantro, and serve with ketchup, mustard, and mayonnaise on the side.
