1 cup shredded cheese (mozzarella or your favorite variety)
1 onion, grated
1 egg
2 tablespoons flour

Instructions
In a large bowl, mix the grated potatoes, grated onion, egg, flour, salt, and pepper until well combined.
Pour oil into a skillet to cover the bottom and heat over medium heat.
Scoop a spoonful of the potato mixture into your hand, flatten it slightly, then place a small amount of shredded cheese in the center. Cover the cheese with a bit more potato mixture and flatten again to form a pancake.
