1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 tsp ground cinnamon

1/2 tsp ground ginger
1/2 cup chopped walnuts (optional)
2 cups all-purpose flour
1/2 tsp salt
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
Beat in eggs and vanilla extract until well combined.
Gradually add dry ingredients to the wet mixture, mixing until just combined.
Stir in grated carrots and chopped walnuts, if using.
Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing them 2 inches apart.
Bake for 12-15 minutes until edges are golden. Cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
In a bowl, beat together softened cream cheese and butter until smooth. Gradually beat in powdered sugar and vanilla until creamy.
