  • 1 teaspoon anchovy paste
  • 1/4 cup olive oil
  • 1/2 cup pizza/marinara sauce
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 1/2 teaspoon kosher salt
  • 1 cup croutons
  • 1 loaf focaccia bread
  • 2 cups romaine lettuce
  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup Parmesan cheese
  • 1/2 cup mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Spread pizza or marinara sauce evenly over the focaccia bread. Sprinkle a generous amount of Parmesan and mozzarella cheese over the sauce. Arrange pepperoni slices on top of the cheese. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
  2. In a bowl, whisk together 1 egg yolk, 1 teaspoon of Dijon mustard, 1 teaspoon of anchovy paste, 1 minced garlic clove, and a pinch of kosher salt. Add 2 tablespoons of fresh lemon juice and 1 teaspoon of Worcestershire sauce. Slowly drizzle in 1/4 cup of olive oil while whisking continuously until the dressing is smooth and emulsified.
  3. Toss chopped Romaine lettuce with croutons in a large bowl. Drizzle the homemade Caesar dressing over the salad and toss to coat evenly.
  4. Once the focaccia pizza base is baked, remove it from the oven and let it cool slightly. Cut the focaccia into sandwich-sized pieces. Place a generous amount of Caesar salad on one piece of the focaccia, then top with another piece to create a sandwich. Serve immediately.
