  • 2 cups shredded mozzarella cheese
  • 4 large eggs
  • Fresh basil leaves for garnish (optional)
  • 23 medium tomatoes, thinly sliced
  • 1 cup pizza sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 2 1/4 tsp active dry yeast
  • 3 1/2 to 4 cups all-purpose flour
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp sugar
  • 1 1/2 cups warm water (110°F)

Instructions

  1. In a small bowl, combine the warm water, sugar, and active dry yeast. Let sit for about 5 minutes until frothy.
  2. In a large bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.
  6. Punch down the dough and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.
  7. Transfer the rolled-out dough to a pizza peel or baking sheet lined with parchment paper if not using a pizza stone.
  8. Spread a thin layer of pizza sauce over each dough round.
  9. Sprinkle shredded mozzarella cheese evenly over the sauce.
  10. Arrange the tomato slices on top of the cheese.
  11. Crack 2 eggs onto each pizza, spacing them evenly apart.
  12. Sprinkle dried oregano and dried basil over the top. Season with salt and black pepper to taste.
  13. Carefully slide the pizzas onto the preheated pizza stone or place the baking sheet in the oven.
  14. Bake for about 10-12 minutes, or until the crust is golden brown, the cheese is melted and bubbly, and the eggs are cooked to your liking.
  15. Remove the pizzas from the oven and let them cool for a few minutes.
  16. Garnish with fresh basil leaves if desired.
  17. Slice and serve warm.
