  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 10 tablespoons (142g) unsalted butter, melted
  • ½ cup (100g) packed light or dark brown sugar
  • 1 ½ cups (188g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup (85g) old-fashioned whole rolled oats, divided
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 4 ½ cups (about 640g) blueberries
  • ½ cup (100g) granulated sugar
  • 2 tablespoons (15g) cornstarch
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, whisk together flour, oats, brown sugar, baking powder, lemon zest, cinnamon, and salt. Add melted butter and stir until the mixture resembles moist, crumbly sand. Press 2/3 of the mixture into the prepared baking pan to form the crust. Bake for 10 minutes.
  3. In a saucepan over medium heat, combine blueberries, sugar, cornstarch, and lemon juice. Stir gently and cook for 2–3 minutes until the mixture is well combined. Remove from heat and stir in lemon zest.
  4. Spread the blueberry filling evenly over the warm crust. Stir 2 tablespoons of oats into the remaining crumble mixture, then sprinkle it over the filling. Lightly press down.
  5. Bake for 45–55 minutes, or until the top is lightly browned and the blueberry filling is bubbling.
  6. Allow the bars to cool completely in the pan on a wire rack. For best results, refrigerate the cooled bars for up to 1 day before cutting into squares.
  7. Store leftover blueberry pie bars at room temperature for up to 2 days or in the refrigerator for up to 1 week.
