1/2 cup brown sugar
1 cup unsalted butter, chilled and cut into cubes
1 tsp baking powder
1 large egg
1/4 tsp salt
3 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 tsp vanilla extract
4 cups fresh blueberries
1/2 cup granulated sugar
1 Tbsp cornstarch
1 1/2 Tbsp lemon juice
Instructions
Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking dish with butter and parchment paper.
In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt. In a separate bowl, whisk the egg and vanilla, then combine with the dry ingredients and butter until crumbly. Press half into the baking dish.
In another bowl, combine remaining granulated sugar and cornstarch, then add lemon juice and blueberries. Toss to coat and spread over the crust.
Sprinkle the remaining crumb mixture over the blueberries and bake for 38-42 minutes until golden brown.
Cool in the dish for 20-30 minutes before cutting into squares and store in an airtight container.
