18 ounces fresh or frozen blueberries
¼ cup sugar
2 tablespoons cornstarch
¼ teaspoon ground cinnamon
1 cup all-purpose flour
¼ cup white sugar
¼ cup light brown sugar
1 teaspoon baking powder
½ teaspoon kosher salt
6 tablespoons cold butter (grated)
¼ cup boiling hot water
3 tablespoons white sugar
1 teaspoon cinnamon
Instructions
In a medium saucepan, whisk together cornstarch and sugar until smooth. Add water, blueberries, and lemon juice. Cook over medium heat, stirring frequently, until thickened. Remove from heat and let cool.
Preheat oven to 400°F. Grease an 8" square baking dish with butter. Pour the prepared blueberry filling into the dish.
In a mixing bowl, combine flour, white sugar, brown sugar, baking powder, and salt. Add grated cold butter and cut into the flour mixture using a fork until crumbly. Stir in boiling water until just combined, leaving small lumps of butter.
Drop spoonfuls of the cobbler topping over the blueberry filling. In a small bowl, mix together white sugar and cinnamon for the topping. Sprinkle the cinnamon sugar mixture over the cobbler topping.
Bake for 28-30 minutes or until the crust is golden and a toothpick inserted into the crust comes out clean.
Serve warm or at room temperature, paired with a scoop of vanilla ice cream or whipped cream for a delightful finishing touch.
