1 cup granulated sugar
24 ounces fresh blackberries
3 tablespoons cornstarch
¾ cup water
1 ½ cups all-purpose flour
1 tablespoon granulated sugar
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ cup cold butter (grated or finely cubed)
⅓–½ cup cold buttermilk
¼ teaspoon ground cinnamon (optional)
Instructions
In a large saucepan, combine the fresh blackberries, 1 cup granulated sugar, and ground cinnamon (if using). Cook over medium heat, stirring occasionally, until the mixture starts to boil.
Mix the cornstarch with water until smooth. Stir this mixture into the berry mixture. Continue to cook, stirring frequently, for about 2 minutes or until the mixture thickens. Pour this into a greased 8" square baking dish.
Preheat your oven to 350°F (175°C). In a small bowl, whisk together the flour, 1 tablespoon granulated sugar, baking powder, and kosher salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cold buttermilk just until combined. Drop spoonfuls of the batter onto the hot berry mixture.
Bake, uncovered, for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
