1 cup mushrooms, sliced
1 lb (500g) beef sirloin or tenderloin, thinly sliced
2 tbsp olive oil
2 cloves garlic, minced
1 onion, chopped
1/4 cup flour
2 cups beef broth
1 tbsp Dijon mustard
1/2 cup sour cream
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Egg noodles or rice, for serving
Instructions
Heat olive oil in a large skillet over medium-high heat. Add the beef slices and cook until browned. Remove from skillet and set aside.
In the same skillet, add chopped onion, minced garlic, and sliced mushrooms. Sauté until the vegetables are softened.
Sprinkle flour over the vegetables and stir well. Gradually pour in beef broth, stirring continuously until the sauce starts to thicken.
Stir in Dijon mustard and sour cream. Return the browned beef to the skillet and cook for a few more minutes until everything is heated through.
Season with salt and pepper to taste. Garnish with chopped parsley and serve over egg noodles or rice.
