This Beef Enchilada Casserole is a hearty and flavorful dish that combines layers of seasoned ground beef, pinto beans, and melted cheddar cheese, all enveloped in soft tortillas and smothered in rich red enchilada sauce.   • 2 ½ cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • 10 small tortillas, cut in half
  • 1 pound ground beef (93% lean)
  • 15 ounces pinto beans, rinsed and drained
  • 1 tablespoon taco seasoning
  • 2 cups red enchilada sauce
  • 2 tomatoes, cored, seeded, and diced
  • ¼ cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly coat a 2-quart baking dish with cooking spray.
  2. Heat olive oil in a large pan over medium heat. Add ground beef and cook, breaking it apart, for 6-8 minutes until browned.
  3. Stir in taco seasoning, salt, and pepper. Add pinto beans and mix well.
  4. Spread ¼ cup of enchilada sauce on the bottom of the baking dish. Arrange ⅓ of the tortilla halves over the sauce. Layer ½ of the meat mixture on top, followed by ¾ cup of cheddar cheese. Pour ½ cup of enchilada sauce over the cheese.
  5. Add another layer with ⅓ of the tortillas, the remaining meat mixture, ¾ cup of cheddar cheese, and ½ cup of enchilada sauce.
  6. Place the final ⅓ of the tortillas on top. Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheddar cheese.
  7. Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 5-10 minutes, until the cheese is melted and slightly browned.
  8. Sprinkle diced tomatoes and green onions on top. Let the casserole sit for 5 minutes before serving.
