  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1/2 pound ground beef (optional for non-vegetarian version)
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Butter or oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat. If using ground beef, add it to the skillet and cook until browned. Drain excess fat if necessary. Add chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for another 1-2 minutes. Mix in pinto beans, black beans, ground cumin, and chili powder. Season with salt and pepper to taste. Cook for 5-7 minutes until heated through.
  2. Heat a large skillet or griddle over medium heat and lightly grease with butter or oil. Place one tortilla in the skillet. Sprinkle 1/2 cup shredded cheddar cheese evenly over the tortilla. Spread a portion of the bean mixture over the cheese, then top with diced tomatoes, chopped red onion, and fresh cilantro. Sprinkle another 1/2 cup of shredded cheddar cheese on top, then place a second tortilla over the filling.
  3. Cook for about 3-4 minutes on one side until golden brown and cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes until the second side is golden brown and cheese is fully melted. Remove from the skillet and repeat with remaining tortillas and filling.
  4. Cut quesadillas into wedges and serve immediately with optional toppings like salsa, guacamole, and sour cream.
