2 large peaches, sliced
1/2 cup balsamic vinegar
1 pound pork chops
2 cloves garlic, minced or grated
1/2 teaspoon pepper
2 tablespoons apricot preserves (or honey)
1/2 teaspoon salt
2 teaspoons dijon mustard
1 teaspoon thyme, chopped (optional)
1/4 cup blue cheese (or feta), crumbled (optional)
Instructions
In a bowl, combine balsamic vinegar, apricot preserves, mustard, garlic, thyme, salt, and pepper. Marinate the pork chops in half of this mixture for 20 minutes to overnight, reserving the remaining half.
Shake off excess marinade and pan-fry the pork chops over medium-high heat until cooked through, about 3-5 minutes per side. Set aside the cooked pork chops.
Place the remaining balsamic mixture in the same pan and simmer until it starts to thicken, about 3 minutes.
Add the sliced peaches to the pan and cook until just tender, about 2 minutes.
Top the pork chops with the balsamic peach sauce and crumbled blue cheese (if using).
