  • 1 tbsp olive or rapeseed oil
  • 2 large onions (325g), halved and sliced
  • 600g diced lean stewing beef
  • 2 garlic cloves, chopped
  • 10g dried porcini mushrooms
  • 2 tbsp balsamic vinegar
  • 2 tbsp tomato purée
  • 2 tsp vegetable bouillon powder
  • 1 tsp English mustard powder
  • 320g carrots, finely chopped
  • 200g large chestnut mushrooms, quartered
  • Few fresh thyme sprigs
  • 4 x 80g portions broccoli, cut into florets
  • 750g swede, cut into chunks
  • 500g potatoes, cut into small chunks
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 170°C/150°C fan/gas 3.
  2. Heat the olive or rapeseed oil in a heavy-based ovenproof casserole over medium heat. Add the halved and sliced onions and fry until golden, about 8 minutes. Stir in the diced lean stewing beef and chopped garlic, and cook until browned all over.
  3. Hydrate the dried porcini mushrooms by pouring 500ml of boiling water over them in a bowl.
  4. Pour the hydrated mushrooms along with the liquid into the casserole. Stir in the balsamic vinegar, tomato purée, vegetable bouillon powder, and English mustard powder. Add the finely chopped carrots, quartered chestnut mushrooms, fresh thyme sprigs, and seasoning with salt and pepper. Stir to combine.
  5. Cover the casserole and transfer it to the preheated oven. Cook for about 2-2.5 hours, or until the beef is tender and the flavors are well blended.
  6. Boil the swede and potatoes until tender, about 20-25 minutes. In a separate pan, cook the broccoli florets until tender, about 5-7 minutes. Drain and set aside. Drain the swede and potatoes, then mash them together until smooth. Season with salt and pepper to taste.
  7. Spoon the veggie mash onto plates. Top with generous portions of the balsamic beef stew. Serve with the cooked broccoli florets on the side.
