1/4 cup ice water
1 egg (for egg wash)
1/2 tsp salt
2 cups all-purpose flour
Filling of your choice (e.g., ground beef, chicken, cheese, vegetables)
1/2 cup unsalted butter, cold and cubed
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Gradually add the ice water, mixing until the dough just comes together. Be careful not to overwork the dough.
On a lightly floured surface, roll out the dough to about 1/8 inch thick. Use a round cutter or a glass to cut out circles of dough.
Place a spoonful of your chosen filling in the center of each dough circle. Fold the dough over to enclose the filling and press the edges together to seal.
In a small bowl, beat the egg and brush it over the top of each empanada.
