  • 2 large eggs
  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 cup (60g) breadcrumbs
  • 1/2 tsp dried oregano
  • 2 cups (200g) finely chopped broccoli florets
  • 1/2 tsp dried basil
  • 1/4 cup (60ml) milk
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
  2. Steam the broccoli florets until tender, about 5 minutes. Allow to cool slightly, then chop finely.
  3. In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, milk, garlic, oregano, basil, salt, and pepper. Mix well until fully combined.
  4. Form the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  5. Lightly spray or brush the balls with olive oil. Bake for 15-20 minutes, or until the balls are golden brown and crispy.
  6. Serve warm as a snack or appetizer.
