6 large poblano peppers, halved and seeded
1 ½ pounds ground beef
1 tablespoon chili powder
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
¼ teaspoon ground cayenne pepper
¼ teaspoon ground paprika
¼ teaspoon ground dried chipotle pepper
Salt and ground black pepper to taste
1 large onion, chopped
2 (14.5 ounce) cans diced tomatoes with green chile peppers

3 cups shredded Mexican cheese blend
Instructions
Preheat broiler. Place poblano peppers cut-side down on a baking sheet lined with foil. Broil until skins blacken and blister, about 5-8 minutes. Transfer peppers to a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off skins and drain on paper towels.
In a large skillet over medium-high heat, cook ground beef with chili powder, minced garlic, ground cumin, dried oregano, cayenne pepper, paprika, chipotle pepper, salt, and black pepper until beef is no longer pink, about 4 minutes. Add chopped onion and cook until softened, about 2 minutes. Stir in diced tomatoes with green chiles and cook until onions are translucent, about 5 minutes. Remove from heat and let cool.
Preheat oven to 350°F (175°C). Spray a casserole dish with cooking spray. Layer prepared poblano peppers on the bottom of the dish. Spread 1/3 of the beef mixture over peppers, then sprinkle with 1 cup shredded Mexican cheese blend. Repeat layers twice. Bake uncovered until golden brown on top, about 35 minutes.
