This apple pecan cake with caramel glaze is a delightful dessert that combines the tartness of Granny Smith apples with the rich flavor of pecans, all topped with a luscious caramel glaze. It’s perfect for family gatherings or cozy evenings, offering a moist and flavorful experience in every bite.

  • 1½ cups cooking oil
  • 4 eggs
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 cups flour
  • ½ tsp cinnamon
  • 2 tsps vanilla
  • 3½ cups Granny Smith apples, peeled and chopped
  • 2 cups sugar
  • 1 cup chopped pecans
  • ¼ cup milk
  • 1 cup light brown sugar
  • ¾ cups butter

Instructions

  1. Preheat your oven to 325°F (160°C). Generously grease and flour a tube pan or two loaf pans.
  2. In a large mixing bowl, combine the oil, sugar, and eggs. Beat until smooth and creamy. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet mixture, mixing well after each addition. Add the vanilla and mix well. Fold in the chopped apples and pecans until evenly distributed.
  3. Pour the batter into the prepared pan(s). Bake at 325°F for about 1 hour. Check the cake at 50 minutes by inserting a toothpick into the center; if it comes out clean, the cake is done.
  4. In a small saucepan, melt the butter over low heat. Stir in the brown sugar and milk. Bring to a boil over low heat, then reduce to a simmer. Stir constantly and let it boil for 10 minutes. Remove from heat and stir in the vanilla. Let the glaze cool slightly.
  5. Once the caramel glaze has cooled a bit, pour it over the top of the cake. Allow it to set before serving.
