2 medium-sized regular eating apples, peeled, cored, and chopped
30 g light brown soft sugar
½ tsp cinnamon
¼ tsp mixed spice
1 tsp cornflour (cornstarch)
10 g unsalted butter
8 g light brown soft sugar
17 g plain flour
⅛ tsp cinnamon
175 g unsalted butter or baking spread, softened
175 g light brown soft sugar
3 large eggs
175 g self-raising flour
½ tsp cinnamon
¼ tsp mixed spice
175 g unsalted butter, softened
350 g icing sugar
1 ½ tsp cinnamon
2–3 tbsp milk
Instructions
Preheat oven to 180°C. Combine flour, brown sugar, and cinnamon for the crumble topping. Rub in butter until mixture resembles breadcrumbs. Bake until golden, about 10-15 minutes.
Cook apples, brown sugar, cornflour, cinnamon, and mixed spice over low heat until soft, about 10-15 minutes. Cool completely.
Cream butter and sugar for the cupcakes. Add eggs, then fold in flour and spices. Bake until a skewer comes out clean, about 20-25 minutes. Cool, then core and fill with apple filling.
Whip butter for the buttercream, then mix in cinnamon, icing sugar, and milk until smooth. Adjust consistency with more milk if needed. Pipe onto cupcakes and top with more filling and crumble.
