1⅔ cup all-purpose flour
1 cup apple cider
⅔ cup sugar
½ cup unsalted butter, softened
2 tsp baking powder
1 tsp ground cinnamon
½ tsp salt
1 tsp vanilla extract
1 cup softened butter (for frosting)
3 cups powdered sugar
½ cup light brown sugar
1 tsp ground cinnamon (for frosting)
2 tbsp milk
1 tsp vanilla extract (for frosting)
Instructions
In a medium bowl, cream together softened butter and sugar until creamy. Add eggs and vanilla extract, beating until well combined.
In another bowl, whisk together flour, baking powder, ground cinnamon, and salt until evenly mixed.
Gradually add the dry mixture to the butter mixture, alternating with apple cider. Stir until batter is smooth and well combined.
Line muffin tins with cupcake liners. Spoon batter into each liner, filling about 2/3 full. Bake at 350°F (175°C) for 18-20 minutes or until a toothpick inserted into the center comes out clean.
In a medium bowl, beat together softened butter, brown sugar, cinnamon, and vanilla extract until fluffy. Gradually add powdered sugar, mixing until smooth and creamy. Stir in milk until frosting reaches desired consistency.
Once cupcakes are cooled, pipe frosting onto each cupcake using a piping bag. Garnish with a slice of apple on top of each cupcake for decoration.
