1¼ cups powdered sugar
2 large eggs
2 teaspoons fresh lemon juice
1 teaspoon ground cinnamon
2–3 cups peeled, cored, and chopped Granny Smith or Gravenstein apples
¼ cup milk
½ teaspoon salt
2 teaspoons baking powder
¼ teaspoon vanilla extract
Vegetable oil for deep-frying (approx. 4-5 cups)
Instructions
In a large bowl, beat the granulated sugar and eggs with a mixer until light and fluffy, about 1-2 minutes. Add flour, baking powder, cinnamon, salt, and milk to the bowl. Mix until well combined.
In a separate bowl, toss the chopped apples with fresh lemon juice. Gently fold the apple mixture into the batter until evenly distributed.
Heat vegetable oil in a deep pan or skillet to 375°F (190°C). Use a deep-fry thermometer for accuracy or an electric skillet with temperature control.
Scoop large spoonfuls of the batter and carefully slide them into the hot oil. Fry the fritters until golden brown, about 2-3 minutes per side. Use two spoons to flip them gently if needed. Ensure both sides are evenly browned and cooked through.
Use a slotted spoon to remove the fritters from the oil and place them on a paper-towel-lined plate to drain and cool.
In a small bowl, whisk together powdered sugar, vanilla extract, and warm water until the glaze is smooth and paintable.
Brush the glaze over the tops of the cooled fritters using a pastry brush. Allow the glaze to set slightly, then flip the fritters and glaze the bottoms. Place glazed fritters on a wire rack to let the glaze harden completely.
