1 pound Wagyu beef, thinly sliced
2 tablespoons apple cider vinegar
2 tablespoons soy sauce
2 tablespoons brown sugar
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/2 teaspoon black pepper
1/4 cup water
1 red onion, thinly sliced
1/2 cup apple cider vinegar
1 tablespoon sugar
1 teaspoon salt
8 small flour tortillas, warmed
Instructions
In a bowl, mix 1/2 cup apple cider vinegar, 1 tablespoon sugar, and 1 teaspoon salt. Add the thinly sliced red onion and stir well. Let the mixture sit for at least 15 minutes to pickle.
In a separate bowl, combine soy sauce, apple cider vinegar, brown sugar, minced garlic, ground cumin, smoked paprika, dried oregano, salt, ground cloves, ground cinnamon, black pepper, and water. Stir until well combined. Place the thinly sliced Wagyu beef in a shallow dish or resealable plastic bag, pour the marinade over the beef, ensuring it’s evenly coated. Refrigerate and marinate for at least 30 minutes or up to 2 hours.
Heat a large skillet over medium-high heat. Remove the beef from the marinade, discarding the excess marinade. Cook the beef in batches, about 2-3 minutes per side, until browned and cooked through. Remove from the skillet and set aside.
Warm the tortillas in the same skillet for about 30 seconds per side, or until heated through.
Fill each warmed tortilla with slices of cooked Wagyu beef. Top with pickled onions.
