1/2 medium head green cabbage (sliced into ribbons, about 4 cups worth)
1 pound kielbasa (sliced thin)
1 tablespoon refined coconut oil or light olive oil
1 pound potatoes (any variety, peeled and chopped into 1/2-inch pieces)
1/2–1 teaspoon kosher salt (adjust to taste)
2 tablespoons water
1 small onion (chopped into 1/2-inch pieces)
3 cloves garlic (minced)
1/2 teaspoon freshly ground black pepper
Instructions
Peel and chop potatoes, then place them in a glass bowl. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Microwave for 4 minutes, stir, then microwave for 2-4 more minutes until fork-tender.
In a large skillet over medium-high heat, warm oil. Add onions and sauté until barely tender and lightly browned. Add garlic and sliced kielbasa. Cook for about 3 minutes, stirring frequently.
Once potatoes are tender, add them to the skillet. Toss to coat, adding more oil if needed. Spread potatoes and cook for 2-3 minutes until lightly browned.
Add sliced cabbage to the skillet. Sprinkle with remaining salt and pepper. Toss to combine, then add water. Reduce heat to medium-low, cover, and cook for about 2 minutes until cabbage is bright green and barely wilted.
Taste and adjust seasoning if needed. Serve immediately.
