  • 1 cup finely chopped nuts (pecans or walnuts)
  • 2 cups semi-sweet chocolate chips or chocolate melting wafers
  • 2 tablespoons coconut oil (optional)
  • Additional chopped nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add these dry ingredients to the wet mixture, mixing until just combined.
  4. Roll the dough into small balls and place them on the prepared baking sheet, flattening each slightly with your palm. Bake for 10-12 minutes until lightly golden around the edges. Cool completely on a wire rack.
  5. Once cooled, spread caramel sauce on the flat side of half the cookies. Sprinkle chopped nuts over the caramel and top with another cookie to form a sandwich.
  6. Melt chocolate chips or wafers in a microwave-safe bowl in 30-second intervals, stirring until smooth. Optionally, stir in coconut oil for a smoother texture.
  7. Dip each cookie sandwich into the melted chocolate, coating completely. Use a fork to lift out, letting excess chocolate drip off. Place on parchment-lined sheet.
  8. Sprinkle additional chopped nuts on top before chocolate sets. Let cookies sit at room temperature or refrigerate until chocolate firms up.
