1 cup whole milk, room temperature
4 large eggs, room temperature
3 cups all-purpose flour
1 cup vegetable shortening
2 teaspoons vanilla extract
2 cups sugar
2 teaspoons baking powder
¼ teaspoon salt
4 cups sugar (for frosting)
1 cup milk (for frosting)
½ cup boiling water (for frosting)
½ cup sugar (for burning)
1 teaspoon vanilla extract (for frosting)
2 sticks margarine
Instructions
Preheat your oven to 350°F. Grease and flour your cake pans.
Cream the vegetable shortening and 2 cups of sugar together until light and fluffy.
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Sift together the flour, baking powder, and salt three times for a fine mixture.
Alternately add the dry ingredients and the 1 cup of milk to the creamed mixture, beginning and ending with the dry ingredients. Stir in the vanilla extract.
Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes completely on a wire rack before frosting.
In an iron skillet, burn ½ cup of sugar until it turns a deep amber color.
Carefully add ½ cup of boiling water to the caramelized sugar to create a syrup.
In a large saucepan, combine the syrup, 4 cups of sugar, 2 sticks of margarine, and 1 cup of milk. Cook over medium heat until it reaches the soft ball stage (235-240°F on a candy thermometer).
Remove from heat and stir in the vanilla extract.
Set the pan in cold water and beat the mixture until it thickens enough to spread on the cake.
