  • 1 pound beef tenderloin, finely diced
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped shallots
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • Water, as needed
  • 1 cup red wine
  • 1/4 cup beef broth
  • 2 tablespoons unsalted butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced beef tenderloin and brown on all sides, about 3-4 minutes. Add mushrooms, shallots, garlic, and thyme. Cook until mushrooms are tender and shallots are translucent, 5-6 minutes. Season with salt and pepper, then remove from heat and stir in Parmesan cheese. Let cool slightly.
  2. In a bowl, combine flour, eggs, and olive oil. Knead until smooth, adding water as needed. Cover with plastic wrap and let rest for 30 minutes.
  3. Roll out dough into thin sheets using a pasta roller or rolling pin. Place small spoonfuls of beef mixture on one sheet, leaving space between each mound. Top with another sheet of dough and press down around each filling mound to seal. Cut out individual ravioli with a knife or cutter.
  4. Bring a large pot of salted water to a boil. Cook ravioli in batches for 2-3 minutes, or until they float. Remove with a slotted spoon and set aside.
  5. In a saucepan, combine red wine and beef broth. Simmer over medium heat until reduced by half, 10-15 minutes. Remove from heat and whisk in butter until melted. Season with salt and pepper.
  6. Plate the beef Wellington ravioli and drizzle with red wine reduction sauce.
