Ingredients

Scale
  • 2 medium bananas, thinly sliced
  • 1 large egg
  • 1 large egg yolk
  • ½ cup + 3 tablespoons granulated sugar
  • 2 cups whole milk
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 1 9-inch pie crust
  • ¼ teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prebake your pie crust according to the package instructions. Once baked, set it aside to cool.
  2. In a large saucepan, whisk together the milk, sugar, cornstarch, salt, egg, and egg yolk until well combined. Place the saucepan over medium heat and stir constantly until the mixture starts to simmer and thicken. Remove from heat and whisk in the butter and vanilla extract.
  3. Cover the pudding with plastic wrap, ensuring it touches the surface to prevent a skin from forming. Allow it to cool on the counter for 30 minutes.
  4. Arrange the sliced bananas on the bottom of the prebaked pie crust. Pour the cooled pudding over the bananas, spreading it evenly. Cover the pie with plastic wrap, ensuring it touches the pudding surface.
  5. Place the pie in the fridge for 3-4 hours or until the pudding sets.
  6. In a medium mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
  7. Spread the whipped cream over the chilled pie. Slice, serve, and relish the delightful flavors of Banana Cream Pie!
