These Vegetable Spring Rolls are a delightful, crispy treat perfect for any meal or as a party appetizer. They’re light, crunchy, and full of fresh flavors that will leave everyone coming back for more!

  • 1 package phyllo pastry sheets
  • 2 cups mixed vegetables (carrots, cabbage, bell pepper, bean sprouts, finely chopped)
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/4 cup green onions, finely chopped
  • 2 tbsp vegetable oil (for cooking the filling)
  • 1 egg, beaten (for sealing the rolls)
  • Sesame seeds (optional, for garnish)
  • Fresh parsley (for garnish)

Instructions

  1. Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat. Sauté minced garlic and ginger until fragrant. Add the mixed vegetables and stir-fry for 5-7 minutes until tender but crisp. Stir in soy sauce, optional oyster sauce, and sesame oil. Mix well. Add green onions and cook for another 1-2 minutes. Remove from heat and let the filling cool completely.
  2. Preheat your oven to 375°F (190°C). Unroll the phyllo pastry sheets and cover them with a damp kitchen towel to keep them from drying out. Place one sheet of phyllo on a clean, dry surface. Lightly brush it with melted butter or oil. Layer another sheet on top and brush again. Repeat this process until you have 3-4 layered sheets.
  3. Cut the layered phyllo into rectangles of your desired size. Spoon a portion of the vegetable filling at one end of each rectangle. Fold the sides over the filling and roll tightly. Brush the edge with beaten egg to seal.
  4. Arrange the rolls on a baking sheet lined with parchment paper. Brush the tops with beaten egg and sprinkle with sesame seeds (if using). Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and crispy.
  5. Let the rolls cool slightly before serving. Garnish with fresh parsley and enjoy with your favorite dipping sauce.
