Ingredients
- 2 lbs baby Yukon gold potatoes
- 2 tablespoons extra virgin olive oil
- 1/2 cup plain Greek yogurt

- 1/3 cup chopped pickles
- 1/4 cup chopped scallions
- 1/2 cup light mayo
- 2 teaspoons dijon mustard
- 2 tablespoons pickle juice
- 1 tablespoon garlic paste or minced garlic

Instructions
- Boil the baby Yukon gold potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.
- Preheat your oven to 425°F (220°C). On a baking sheet lined with parchment paper, place the cooled potatoes and gently smash each one using a potato masher or fork.
- Drizzle olive oil over the smashed potatoes and sprinkle with salt and pepper. Roast for about 25 minutes until golden brown and crispy.
