  • 2 1/2 cups finely chopped yellow onions
  • 1 cup milk
  • 1/4 teaspoon black pepper
  • 1/2 cup cooking oil (Canola or preferred)
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons white granulated sugar
  • 2 tablespoons cornmeal (self-rising or regular)

Instructions

  1. In a large bowl, whisk together the all-purpose flour, baking powder, sugar, salt, black pepper, and cornmeal. Fold in the finely chopped onions until evenly coated.
  2. Pour in the milk and mix with a spoon until the batter is thick and well combined.
  3. Heat about ½ inch of cooking oil in a skillet over medium heat.
  4. Using a 1/4 cup measuring cup, drop spoonfuls of batter into the hot oil. Flatten each patty slightly with a spatula for even cooking. Cook for about 3-4 minutes on each side, or until golden brown.
  5. Place the cooked patties on paper towels to drain excess oil. Sprinkle with a little salt if desired.
  6. Serve warm and enjoy!
