Indulge in these crispy yet creamy Mashed Potato Cheese Bites, a perfect treat for any occasion. These bites are made with cold mashed potatoes, quick-melt cheese, and coated in panko bread crumbs, making them a delightful appetizer or snack.

  • 2 cups cold mashed potatoes
  • ¼ cup minced chives or green onions
  • 16 cubes quick-melt cheese
  • 2 beaten eggs
  • ⅓ cup all-purpose flour
  • 1 cup panko bread crumbs
  • Vegetable oil, for frying

Instructions

  1. In a bowl, combine cold mashed potatoes with minced chives or green onions. Season with salt and pepper to taste, if needed.
  2. Take a golf-ball-sized portion of mashed potatoes and flatten it slightly. Press one cube of quick-melt cheese into the center. Mold the mashed potatoes around the cheese to form a ball. Repeat with the remaining potatoes and cheese cubes.
  3. Roll each potato ball in flour until coated. Dip into beaten eggs, then roll in panko bread crumbs until evenly covered. Place the coated balls on a baking sheet and freeze for 1 hour until firm.
  4. In a medium saucepan, heat vegetable oil over medium heat until it reaches 350°F (175°C). Carefully lower several potato balls into the hot oil using a slotted spoon. Fry until golden brown, about 4 minutes. Remove with a slotted spoon and drain on paper towels.
  5. Serve the Mashed Potato Cheese Bites hot, optionally with gravy for dipping.
