  • 500g raw prawns, peeled and deveined
  • 3 garlic cloves, minced
  • 1 cup long-grain white rice, cooked
  • 1 cup frozen peas and carrots, thawed
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • 1/4 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F). Grease a baking dish with a little olive oil or butter.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Sauté minced garlic for about 1 minute until fragrant. Add prawns and cook for 2-3 minutes until they just start to turn pink. Season with salt and pepper. Remove from heat and set aside.
  3. In a large bowl, combine cooked rice, thawed peas and carrots, and half of the grated cheese. Season with salt and pepper to taste.
  4. Transfer the rice mixture to the prepared baking dish and spread it out evenly. Arrange garlic prawns on top.
  5. In a small bowl, mix breadcrumbs with remaining grated cheese and 1 tablespoon of olive oil. Sprinkle evenly over the prawns and rice.
  6. Place the baking dish in the preheated oven and bake for 15-20 minutes, until the top is golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley, if desired, and serve warm.
