These Fried Mashed Potato Balls are a delicious way to use up leftover mashed potatoes. They are crispy on the outside and soft on the inside, filled with cheese, bacon, and chives. Perfect as an appetizer or snack, these bite-sized treats are sure to please everyone.

  • 3 cups leftover mashed potatoes
  • 2 tablespoons thinly sliced chives
  • 2/3 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 3 slices bacon, cooked and crumbled
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 eggs, beaten
  • 1 1/3 cups panko bread crumbs
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix together mashed potatoes, crumbled bacon, shredded cheddar, chives, and garlic powder. Season with salt and pepper to taste. Stir until well combined.
  2. Set up two shallow bowls: one with beaten eggs and one with panko bread crumbs.
  3. Using a small cookie scoop, portion out 1 to 2-inch balls of the mashed potato mixture. Roll each ball gently in your hands, then dredge first in the beaten egg and then coat with panko crumbs. Repeat until all the mixture is used.
  4. In a large cast iron skillet, heat 3 inches of vegetable oil until it reaches 375°F on a candy thermometer.
  5. Fry the potato balls in batches, turning occasionally, until golden brown on all sides, about 2 to 3 minutes. Remove with a slotted spoon and drain on a paper towel-lined plate. Season immediately with additional salt if desired.
