Crispy courgette fries are a delicious and healthier alternative to traditional fries. Coated in a light batter and fried until golden brown, these fries are perfect as a snack or a side dish. Topped with grated Parmesan, they offer a savory flavor that will satisfy your cravings.

Ingredients

  • 2 courgettes, cut into 1cm batons
  • 15g grated Parmesan
  • 2 tbsp plain flour
  • Oil, for deep frying
  • Salt and freshly ground black pepper

Instructions

  1. In a bowl, combine plain flour with 2 tbsp water to form a thick batter. Season generously with salt and pepper.
  2. Mix the courgette batons into the batter until evenly coated.
  3. Pour oil into a pan until it reaches about 4cm deep. Heat over medium heat until the oil reaches 180°C.
  4. Carefully lower half of the battered courgettes into the hot oil. Fry for 5-6 minutes, turning once, until golden brown and crisp. Use a slotted spoon to transfer them to a plate lined with kitchen paper to drain excess oil. Repeat with the remaining courgettes.
  5. Sprinkle grated Parmesan over the courgette fries before serving hot.
