  • 1/4 cup shaved Parmesan cheese
  • 1/4–1/2 teaspoon Cajun seasoning
  • 1 green onion, thinly sliced
  • 1 small French baguette, cut into 1/2 inch thick slices
  • 1 lb shrimp, peeled, deveined, and minced
  • 4 ounces cream cheese, cut into small cubes
  • 1 tablespoon olive oil
  • 1/4 teaspoon fresh cracked black pepper
  • 1/2 small onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1/4 teaspoon crushed red pepper
  • 1/4 cup shaved Fontina cheese
  • 3 cloves garlic, minced
  • Kosher salt and fresh ground black pepper

Instructions

  1. Preheat the broiler on low. Arrange the baguette slices in a single layer on a baking sheet. Broil for 3-5 minutes until lightly browned, then flip and broil the other side.
  2. Heat olive oil in a skillet over medium heat. Add shrimp, onion, and celery. Cook, stirring frequently, for 1 minute. Add garlic, Cajun seasoning, and black pepper. Cook for another minute, stirring constantly. Reduce heat to very low, then add cream cheese, Parmesan, and Fontina. Stir until the cheeses are melted and blended. Season with kosher salt and more black pepper to taste.
  3. Preheat oven to 400°F (200°C). Top each toasted baguette slice evenly with the shrimp mixture. Sprinkle with crushed red pepper. Bake in the oven for 10 minutes or until lightly browned and bubbly.
  4. Sprinkle with thinly sliced green onions. Serve immediately and enjoy!
