Ingredients
Scale
½ cup plus 1 tablespoon all-purpose flour
1 egg, beaten
2 cups yellow squash, finely chopped
1 teaspoon salt
1 cup onion, finely chopped
vegetable oil (for frying)
1 teaspoon pepper
Instructions
In a large bowl, combine the finely chopped yellow squash and onion. Add the beaten egg, salt, and pepper. Mix well to ensure all ingredients are evenly distributed. Stir in the flour until the mixture is well combined.
In a skillet, heat ½ inch of vegetable oil over medium-high heat until hot.
Using a tablespoon, carefully drop portions of the batter into the hot oil. Cook each patty for about 3 minutes per side, or until golden brown, turning once. Once cooked, drain the patties on paper towels to remove excess oil.
