1 can whole kernel corn
2 eggs
Salt & pepper to taste
1/2 cup flour
1 tsp baking powder
1/2 cup shredded cheese
1 pat butter
2 tbsp oil
1/4 cup chopped parsley
Instructions
Drain the whole kernel corn thoroughly and discard the liquid.
In a bowl, beat eggs with salt and pepper until well combined.
Add flour and baking powder to the egg mixture, whisk until smooth.
Stir in the drained corn and shredded cheese until evenly mixed.
Heat butter and oil in a frying pan over medium heat until bubbly.
Drop spoonfuls of the corn mixture into the frying pan. Flatten slightly with the back of the spoon.
Cook the fritters until golden brown on one side, then flip and cook the other side until golden brown and cooked through.
Remove the cooked fritters and drain on absorbent paper towels.
