Air-Fryer Arancini are crispy, cheesy rice balls filled with gooey mozzarella, perfect as a snack or appetizer. Made with creamy risotto and coated in panko breadcrumbs, these delightful bites are easy to prepare and cook quickly in an air fryer, making them a convenient and tasty treat.

  • 200g risotto rice
  • 15g unsalted butter
  • 1 large garlic clove, crushed
  • 50g Parmesan, finely grated
  • 700ml hot chicken or vegetable stock
  • 125g mozzarella, cubed
  • 100g plain flour
  • 2 eggs, beaten
  • 100g dried breadcrumbs (panko)
  • 1 onion, finely chopped
  • Olive oil spray

Instructions

  1. In a skillet, melt the butter over medium heat. Add the finely chopped onion and crushed garlic, cooking until softened and fragrant. Stir in the risotto rice, gradually add the hot stock, stirring constantly until the rice is tender and creamy, about 18-20 minutes. Mix in the grated Parmesan and allow to cool completely.
  2. Take a small amount of the risotto mixture, place a cube of mozzarella in the center, and roll into balls.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs. Roll each risotto ball in flour, dip in eggs, and coat with breadcrumbs.
  4. Preheat the air fryer to 190°C. Lightly spray the basket with olive oil. Arrange arancini in a single layer, spray tops with olive oil, and air-fry for 10-12 minutes until golden and crispy.
  5. Remove from the air fryer and let cool slightly before serving.
