  • 1 cup grated Parmesan cheese
  • 4 1/2 cups chicken broth
  • 16 ounces elbow macaroni
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs
  • 2 cups fresh baby spinach
  • 1 small onion, diced
  • 6 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup sun-dried tomatoes in oil, drained and chopped

Instructions

  1. Heat olive oil in a large pot or skillet over medium heat. Season chicken thighs with Italian seasoning, salt, and pepper. Add chicken to the pot and cook until golden and cooked through, about 6-8 minutes per side. Remove chicken from the pot and set aside.
  2. In the same pot, add diced onion and cook until soft, about 3-4 minutes. Add minced garlic and chopped sun-dried tomatoes, cooking until fragrant, about 1-2 minutes.
  3. Pour in chicken broth and heavy cream. Bring the mixture to a simmer.
  4. Stir in elbow macaroni. Cover and cook, stirring occasionally, until pasta is al dente and the sauce has thickened, about 10-12 minutes.
  5. Reduce heat to low and stir in grated Parmesan and shredded mozzarella cheese until melted and smooth.
  6. Slice or shred the cooked chicken and stir it into the pot along with fresh baby spinach. Cook until spinach is wilted and chicken is heated through.
