  • 1 package (8 oz) cream cheese, softened
  • 2 cups milk
  • 1/2 teaspoon smoked paprika
  • 1/4 cup flour
  • 4 slices bacon, chopped
  • 3 cloves garlic, minced
  • 4 jalapeño peppers, seeded and chopped
  • 2 cups shredded cheddar cheese
  • 4 cups chicken broth
  • 1 small onion, diced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion and chopped jalapeños to the pot. Sauté until the onion is translucent and the jalapeños are softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute.
  4. Sprinkle the flour over the vegetables and stir well to coat. Cook for 2-3 minutes to eliminate the raw flour taste.
  5. Gradually whisk in the chicken broth, making sure to avoid lumps. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  6. Stir in the milk and heavy cream, followed by the shredded cheddar cheese and cream cheese. Stir continuously until the cheeses are fully melted and the soup is smooth.
  7. Add the smoked paprika, salt, and pepper. Adjust the seasoning to taste.
  8. Ladle the soup into bowls and top with crispy bacon, a dollop of sour cream, and chopped green onions.
