1 pound elbow macaroni
1/2 cup butter
2 cups Cheddar cheese, shredded
2 cups Monterey Jack cheese, shredded
1 package Velveeta Original Loaf, cut into chunks
1 1/4 cups milk
2 large eggs
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Cook the elbow macaroni according to package instructions until al dente, then drain and rinse with cold water.
In a medium saucepan, combine Velveeta and milk, heating until melted and smooth.
Whisk the eggs in a small bowl, then gradually add a scoop of warm cheese sauce to temper the eggs before mixing back into the saucepan.
Layer half of the macaroni in the baking dish, season, dot with butter, sprinkle with half of the cheeses, and pour half of the cheese sauce. Repeat the layers.
Bake uncovered for 30-35 minutes until bubbly and golden brown.
